Malay Curried Mince

Malay Curried Mince

A delicious beef mince curry served with the good old South African favourite - Magwinya.
Ingredients

YIELD: 10 Portions

Mince:
  • 30 ml Oil
  • 100 g Onion, chopped
  • 5g Garlic, minced
  • 5 g Chillies, chopped
  • 5 g  Ginger, minced
  • 500 g Mince (Replace with soy mince to make this Vegetarian friendly)
  • 50 ml All Gold tomato paste
  • 1 tin KOO Chakalaka
  • 1 tin KOO Butter beans, drained
  • 1 tin KOO Corn kernels, drained
  • 1 tin All Gold Indian style tomatoes
  • 30 ml Holbrooks Worcestershire sauce
  • 1 sachet Benny Stock powder sachet
  • 150 ml hot water to prepare stock
  • 30 ml MrsBalls Chutney original
  • 10 g Coriander, fresh, chopped
  • 10 g Parsley, fresh, chopped Saltand pepper to taste
Method

Mince:

  1. In a large pot heat oil then sauté onion, garlic, chilli and ginger until soft.
  2. Add the mince and brown, then stir in the remaining ingredients (except for fresh herbs), bring to boil then reduceheat and simmer for 30 minutes uncovered until mince is cooked and sauce reduced.
  3. Add salt and pepper to taste and stir in chopped coriander and parsley.

Serving suggestion:

Serve in Magwinya with grated cheddar cheese, as a pita or wrap filling or over baked potatoes with cheese.
