Persian Style Rice Pudding -Shir Bereni

Indulge in a floral twist on a classic with our Persian-inspired rice pudding, made effortlessly delicious with Tastic Basmati rice. This delightful dessert can be enjoyed hot or cold, offering a refreshing and comforting treat that tantalises the taste buds.
Ingredients

Yield: 10 portions   

  • 200 g Tastic Basmati Rice, rinsed and drained
  • 960 ml Milk
  • 100 g Granulated sugar 
  • 2,5 ml Cardamom, ground
  • A pinch of saffron threads, dissolved in 2 tablespoons of hot water
  • 15 ml Rose water
  • 120 g Chopped pistachios, almonds, or other nuts for garnish (optional)
  • 12 Garnish with Beacon Turkish delight square

Dried rose petals for garnish (optional)

 
Method
  1. In a large saucepan, combine the rinsed Tastic Basmati Rice and milk. 
  2. Bring to a gentle boil over medium heat, then reduce the heat to low and simmer, stirring occasionally, for about 20 minutes, or until the rice is cooked and the mixture has thickened to a pudding-like consistency.
  3. Stir in the granulated sugar, ground cardamom, saffron water, and rose water. 
  4. Continue to cook for another 5 minutes, stirring frequently, until the sugar is dissolved, and the flavours are well combined.
  5. Remove the saucepan from the heat and let the rice pudding cool slightly.
  6. Transfer the rice pudding to serving bowls or glasses. Let it cool to room temperature, then cover and refrigerate for at least 1-2 hours, or until chilled.
  7. Before serving, garnish the Shir Berenj with chopped pistachios, almonds, or other nuts, block of Beacon Turkish delight and dried rose petals if desired.
  8. Serve the Shir Berenj chilled or warm as a refreshing and fragrant dessert.
