Russian Bilinis
Blinis are traditional Russian pancakes, celebrated for their light and thin texture, much like crepes. They can be enjoyed in both sweet and savoury forms. Sweet blinis are often topped with jam, honey, or fruit. Let Golden Cloud and KOO Fruit help you whip up versatile blinis that can be sweet, savoury, large, or served as bite-sized canapés.
Ingredients
Yield: 8 portions
Batter:
- 500 ml Milk
- 3 Eggs, separated
- 280 g Golden Cloud Cake Flour
- 20 g Sugar
- 5 ml Salt
- 45 ml Vegetable oil
- Butter for greasing finished pancakes.
Toppings:
- 410 g KOO Sliced Peaches
- 250 ml Whipped cream
- Salt and pepper, to taste
Method
- Mix your egg yolks with sugar and salt. Add milk and mix again.
- Add flour and oil and mix well. it will be nice and thin batter.
- Whip egg whites to stiff peaks, and fold into batter.
- Add a bit of butter or oil into your pan. Pour one ladle of the pancake mixture and cook for few minutes on each side until cooked and golden.
- Serve with KOO Sliced Peaches and whipped cream for an easy dessert or canapés.
